There are many other leaf crops that can be used as part of a salad, such as any of these cut and use salad leaves.
Endive Cichorium endivia
Purslane Portulaca oleracea
Lambs lettuce Valerianella locusta
Rocket Eruca Sativa
Or any young leaves of food crops such as beetroot.
Any of the leafy herbs such as Parley, Sage, Basil, Thyme and Tarragon or any other available herbs
(don’t use dry herbs unless you are flavouring a dressing)
Although Herbs were mostly used for medicenal purposes in the 15th Century.
